✔ 1-1/2 Cup Oat Flour
✔ 1 Cup Low Fat Milk (Room Temperature)
✔ 1 Egg (Room Temperature)
✔ 1/2 Tsp Baking Powder
✔ 1/4 Tsp Vanilla Extract
✔ 3/4 Tsp Cinnamon
✔ 1/2 Tsp Sugar (or Substitute)
✔ (Optional) Butter for cooking
This is an easy and quick recipe - this makes about nine 6 inch pancakes. You can spice it a little more but start with this...
Preparation - Mix the Oat Flour and Milk until all lumps are stirred out and let sit for 10 minutes. Add the remaining ingredients and mix well. Make sure the batter is pourable - add milk sparingly if needed) and let sit for about 5 minutes.
Cooking - Heat a skillet to medium and put the butter in to melt (or use a neutral cooking spray) - when melted, pour the batter in 3 locations apart from each other. Allow the batter to begin to bubble and then turn so that both sides are golden brown. Remove from the skillet and cover. Repeat until all the batter is used. Add butter and maple syrup for a wonderful start to the day!
Vegan Alternative: Substitute Almond Milk (you will need to use a little more to make a pourable batter). Substitute 2 Tbsp Arrowroot and 2 Tbsp warm water mixed well for the egg.
