Rita's Red Bean Bread


1 Pkg Dry Yeast (1 Tbsp)

1/4 Cup Warm Water

1 Cup Red Bean Flour

2 Tbsp Honey

1 Tbsp Butter or Applesauce

1 Egg

1 Tbsp Instant Minced Onion

1 Tsp Salt

1/4 Tsp Baking Soda

2-1/4 to 2-1/2 Cup Whole Wheat Flour


Preparation - Soften yeast in water. Combine in mixing bowl with bean flour, honey, butter or applesauce, egg, onion, salt and soda. Add flour to form stiff dough, beating well after each addition. Cover, let rise in warm place until light and doubled in size (about 50 minutes). Stir down dough. Turn into 1-1/2 to 2 quart casserole dish coated with cooking spray. Let rise till light (about 30 minutes). Cooking - Bake at 350F for 40-50 minutes. Brush with butter and sprinkle with coarse salt, Enjoy!
