Remove the avocado from the hulls and mash until nearly creamy (take two and don't mash as much if you want chunkier dip). In a medium mixing bowl, combine all the ingredients and mix well. You can also vary the size of the red onion pieces when dicing to make the dip chunkier if you like. Refrigerate to chill and then serve with chips. We are Gluten Free and have tried lots of chips - we prefer "On the Border" brand chips but there may be others which are both Gluten Free and good. Enjoy!
