✔ 3/4 Cup Coconut Flour
✔ 1/2 Tsp Baking Powder, 1/2 Tsp Salt
✔ 6 Eggs
✔ 2 Tsp Vinegar (or Lemon Juice)
✔ 1/2 Cup Melted Coconut Oil (or Canola or Light Olive Oil)
Mix the coconut flour, baking powder and salt together in a medium bowl. In a separate bowl, blend the eggs, vinegar and melted coconut oil. Add the dry ingredients to the wet ingredients in parts stirring well. Place in a 9x5 loaf pan lined with parchment paper. Place in a pre-heated oven and bake for 45-50 minutes at 350F. Use a toothpick to make sure the bread is even throughout. Remove from the oven and let cool for about an hour and then slice (it makes about 12 slices). Use for sandwiches or a bread side to your meal. Store in an air tight container up to 3 days or freeze the slices for up to 3 weeks. Enjoy!
