✔ 1 Lb Fresh Oyster Mushrooms (you can use other kinds as well)
✔ 1-3/4 Cup Oats (Use our Coarse or Fine Grind Oatmeal)
✔ 1 Cup Walnuts (well ground)
✔ 1 Large Onion
✔ 3-4 Cloves Garlic
✔ 2 Tbsp Oregano
✔ 1 Tsp Coconut Aminos (Sauce)
✔ Salt and Pepper (for Taste)
Preparation: Dice the onion and cut up the mushrooms. Heat a pan to medium and lightly saute the onions and then add the mushrooms, garlic and herbs. Saute for about 15 minutes. Combine the oatmeal and walnuts in a mixing bowl. Take the sauteed mix and add to a food processor a little at a time blending until it looks mushy. Add all of the blended mushrooms into the oatmeal and walnuts. Add salt, pepper and coconut aminos. Mix well and allow to sit for about 5-10 minutes. Line a baking sheet with parchment paper or oil the pan. Roll the mushroom meatball mix into 1" balls and place on the baking sheet.
Cooking: Preheat the oven to 350F and bake for about 20 minutes until the tops have browned.
