Pinto Bean Corn Bread


1 Cup Milk (Room Temperature)

1/2 Cup Flour

1/2 Cup Pinto Bean Flour

1 Cup Cornmeal

2 Tbsp Sugar

2 Tbsp Vegetable Oil

1 Egg (Room Temperature)

1 Tsp Salt

3 Tsp Baking Powder


Preparation - Mix the pinto bean flour and the cornmeal in a bowl. Stir in the milk and mix well removing and lumps. Add in the remaining ingredients and stir until just moist (use additional milk sparingly if its too dry as it needs to be thick but pourable). Pour into a greased pan, cast iron frying pan or a corn muffin pan (kind of like good, better, best) that has been preheated and greased.
Cooking - Bake at 400F for about 20 minutes or to your preference. Enjoy!
