✔ 1 Cup Cassava Flour
✔ 1 Cup Almond Flour
✔ 1/2 Tsp Baking Powder
✔ 1/2 Tsp Baking Soda
✔ Pinch of Salt
✔ 1/2 Cup Non-hydrogenated Shortening
✔ 1/2 Cup Finely Chopping Strawberries
✔ 3 Tbsp Almond Milk
✔ 2 Tbsp Maple Syrup
✔ 1 Tbsp Lemon Juice
✔ 1 Tsp Lemon Zest Spice
✔ 1 Tbsp Maple Syrup
✔ 4 Tsp Tapioca Flour
Directions: Combine all dry ingredients in a mixing bowl. Add shortening and mix well - eliminate any lumps in the shortening. Add and mix the strawberries. Whisk the wet ingredients and add just stirring a few times but ensuring the wet mixture is fully part of the batter. Then mix in order to form a ball of dough. Flatten and cut into 8 pieces (don't flatten it too much, just about 1-1/2 inch) using all of the dough. Place on a lined baking sheet. Let chill for 30 minutes.
Cooking: Bake in a pre-heated oven at 375F for 18-20 minutes and then allow to cool. Add the icing and serve. Enjoy!
