Tapioca Pudding


1/2 Cup Tapioca Flour

1/2 Cup White Sugar

3 Cups Milk

2 Eggs (beaten)

1/2 Tsp Vanilla Extract

1/4 Tsp Salt.


Directions: Stir the milk, tapioca, sugar and salt into a saucepan. Bring to a boil over medium heat stirring frequently. Reduce heat to low and stir for 5 additional minutes. Whisk 1 cup of the mixture into the beaten eggs a little at a time until incorporated. Stir the egg mixture back into the tapioca - mix well. Simmer on low for 2 minutes or thick and remove from heat to stir in the vanilla. Serve hot or chilled!
